Valencia is Spain's third largest city and one of the most consistently underestimated. It sits on the Mediterranean coast, south of Barcelona and east of Madrid, with over 300 days of sunshine a year and a pace of life that feels genuinely relaxed rather than performatively so. It was named European Green Capital in 2024 and World Design Capital in 2022, which says something about how seriously the city takes itself, but the more honest pitch is simpler: Valencia has excellent food, beautiful architecture, interesting neighbourhoods, beaches ten minutes from the centre, and nowhere near the tourist density of Barcelona. It is the kind of city where you can still feel like you are living in it rather than just visiting. The crowd reflects that. Valencia attracts people who have done Barcelona and found it exhausting, design-minded travellers, serious food people, and a growing number of Europeans who have quietly moved there and made it their city. It is not a scene in the way San Sebastián is, and it is not showy in the way parts of Madrid can be. The vibe is Mediterranean and genuinely local, and the food is the honest reason most people fall in love with it. Paella was invented here, and eating the real version, made with rabbit and green beans rather than the seafood approximation the rest of the world thinks it is, near the Albufera wetlands where the rice is actually grown, is one of those experiences that renders every previous paella irrelevant. Beyond that there is fideuà, the noodle version cooked in the same pan with a deep seafood stock, horchata made fresh from tiger nuts and drunk cold on a hot afternoon, and the Mercat Central, one of the largest fresh produce markets in Europe, housed in a magnificent Art Nouveau building. The neighbourhood of Ruzafa is where the city's creative restaurant energy has concentrated, and El Carmen in the old town is for bar-hopping and street art. Las Fallas in March, when the city builds enormous satirical sculptures and burns them all in a single night, is one of the most extraordinary public festivals in Europe and a reason to visit in itself. The interiors are warm and detailed, exposed brickwork and considered design rather than the generic boutique aesthetic, and there are two penthouse rooms with private terraces if you want to wake up with a view over the old town rooftops. The restaurant on the ground floor has a strong enough reputation that guests eat there by choice rather than convenience. The location means you walk to almost everything that matters in the historic centre, and the beach is a direct bus or bike ride away. This is not a destination hotel in the way that some others on Pink Notebook are. It is a very good base for a city that deserves more than a weekend.
