Burgos sits on the high Castilian plateau in northern Spain, about two and a half hours from Madrid by train and roughly halfway between Madrid and Bilbao. It is one of those cities that people who have been are evangelical about and people who haven't tend to overlook entirely, which makes it exactly the kind of place worth knowing. The Gothic cathedral is one of the finest in Europe, a UNESCO World Heritage Site that took nearly six centuries to complete and contains the tomb of El Cid, the medieval warrior-knight who is the closest thing Spain has to a national founding myth. Beyond the cathedral, Burgos has two extraordinary monasteries, a Museum of Human Evolution built around fossil discoveries at the nearby Atapuerca archaeological site, a handsome riverside promenade, and a food culture serious enough that UNESCO designated it a Creative City of Gastronomy. The city is known for morcilla de Burgos, a rice-based blood sausage that bears almost no resemblance to its British counterpart, lechazo, milk-fed lamb roasted in a wood oven, and queso fresco de Burgos, a fresh white cheese eaten cold. The Ribera del Duero wine region, which produces some of Spain's most celebrated reds, begins essentially at the city's southern edge. The weather is the one honest caveat. Burgos sits at over 850 metres above sea level on an exposed plateau and the winters are serious, cold, windy, and long. The summer is the sweet spot: warm days, cool nights, and the city at its best. Spring and early autumn are also good, particularly if the cathedral interiors and long walking days are the point. Landa is five minutes outside the city on the old Madrid-Irún road, a position that makes more sense when you know it started in 1959 as a roadside restaurant for travellers on one of Spain's main arteries. The family has been running it for 65 years, expanding gradually, and at some point they acquired and relocated a 14th-century Gothic tower, which now anchors the property and contains some of the hotel's most unusual rooms. This is not a detail you encounter often: a genuine medieval tower, physically moved to a new site, now housing guests in rooms with battlements. The indoor swimming pool is built in a Gothic style and is, by multiple accounts, one of the more extraordinary hotel pools in Spain. There are around 37 rooms, all different, decorated by Pascua Ortega, one of Spain's most respected interior designers, with canopied beds, marble bathrooms, and fabrics that range from pale and linen-quiet to pink and unambiguously bold. The Grand Suite in the tower is where Claudia Cardinale stayed. The bakery produces the breakfast pastries fresh each morning. The restaurant serves classic Castilian food, the suckling lamb in particular is worth planning around, and the wine list draws heavily on the Ribera del Duero. This is a hotel that has been doing exactly what it does for six decades without much interest in being fashionable about it. There is a particular kind of confidence in that.
