Salento is the southernmost tip of Puglia, the narrow heel of Italy's boot, and it has a character distinct from the rest of the region. Minervino di Lecce is one of those small towns, 12 kilometres from Otranto and a short drive from both the Adriatic and the Ionian coasts. Palazzo Ducale Venturi has been here since the 16th century. One of the first noble houses in Salento, it was restored under the supervision of the Italian heritage authority, which means the original Leccese stone star vaults, the ancient chianche floors, and the former salt ovens were all brought back rather than replaced. The hotel has 20 rooms, 14 in the main palace and 6 in the restored old armoury that flanks the saltwater pool. Each room is individually furnished and decorated, and the renovation has done the right thing by letting the architecture lead. The result is genuinely grand in the way that only a building with five centuries of history behind it can be, without feeling like a museum. This is a hotel for people who find that kind of history more interesting than a room with a better view. Chef Francesco Paladino runs the restaurant, which serves exclusively to guests staying in the hotel, drawing on Salento's produce from both land and sea and adjusting to what guests actually want to eat, which is a hospitality approach that suits the intimacy of the place. The wine cellar covers 30 labels worth working through. The most singular feature of the hotel is underground. The ancient olive press, the Frantoio Ipogeo, has been converted into a heated spa pool beneath the palazzo's foundations, with massage and treatment rooms, cryotherapy, and the particular atmosphere of a vaulted stone cave that no purpose-built spa can replicate. The outdoor saltwater pool in the garden is 90 square metres and surrounded by the kind of quiet that this part of Salento does naturally. If your ideal day involves a long morning at the spa, lunch in the garden, and an afternoon driving to a sea cave on the Adriatic coast, this is probably your hotel. The general manager is mentioned by name in review after review, which tells you something about the level of personal attention here. This is a small property run with real care, and it shows in the details. Brindisi airport is about 45 minutes away; Lecce is 30 minutes by car. The short version: A restored 16th-century noble palace in the heart of Salento, with 20 individually furnished rooms, an underground spa in the former olive press, and a restaurant that cooks exclusively for guests. The right choice for someone who wants to be genuinely inside Salento rather than passing through it on the way to the beach.
