The Muolo family runs this 16th century fortified masseria on a hillside between ancient olive groves and the Adriatic. The organic vegetables and fruit at breakfast and in the restaurant come from their own fields, grown using dry agriculture that gives everything a more intense flavor. Some of the olive trees are over 800 years old, the tower itself dates to the 1500s. The property is built around the original watchtower. A 17th century walled garden still uses the original irrigation channels that work by gravity, and there's a chapel from 1730 that fishermen from nearby Savelletri still visit. The 37 rooms spread across different buildings. The old farmhouse holds several with antique furniture and baroque mirrors, while the towers offer vaulted ceilings and sea views. Two rooms are carved directly into limestone caves with private pools opening onto orange groves. The Aveda spa occupies the same ancient caves where the olive mill operated in the year 1000, with an indoor pool, Turkish bath, and enough underground space that you forget about daylight. The main pool is located in formal gardens that slope down toward the spa, positioned to look like it belongs there. Egnathia restaurant operates under star-shaped vaults in the old stables, serving Puglian cuisine based on what's growing on the estate. There's also a beach club five minutes away, and the hotel keeps a 14-meter yacht for getting there. You can take cooking classes, do wine tastings in the cellar, borrow quad bikes to ride through the olive groves, or take horses along the beach. Savelletri's fishing village is nearby with seafood restaurants where locals eat. The whole place feels less like a hotel trying to be a farm and more like an actual farm that lets people stay.
